I'm not much of a baker, partly because I don't like following recipes too closely and partly because most of the time baked goods aren't too healthy BUT I've grown to cooking these little guys quite regularly.
Ingredients:
1/2 cup almond butter
1/2 tahini
1/4 cup coconut sugar (you can leave this out and they still taste great)
1 egg (or 1 chia/flax seed vegan egg)
1/2 teaspoon vanilla extract
2 tablespoons coconut flour
3/4 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup paleo chocolate – I like Pana hazelnut or Loving Earth salted caramel
OR INSTEAD OF CHOCOLATE:
1/4 cup of nuts and seeds - I use a cinnamon paleo muesli mix
Method:
1. Preheat oven to 180 degrees
2. Line a baking tray with baking paper
3. Mix all ingredients (except chocolate and sea salt) into a bowl until
thoroughly mixed.
4. Using a spoon scoop out the mixture into the desired size of the cookies
you will like – they don’t expand much
5. Squeeze the chocolate into the dough balls and place onto the baking
tray
6. Sprinkle some of the sea salt onto the cookies
7. Bake for around 12 minutes – they may need a little longer but don’t let
them get too brown or they may crumble apart
8. Cool the cookies and optionally sprinkle with sea salt
9. Enjoy!
